- 2 cups mixed berries
- 1 cup coconut cream
- 3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1/2 cup crushed vegan cookies or granola
- 2 tablespoons chia seeds optional
- Fresh mint leaves for garnish
Wash the berries and slice the strawberries.
In a bowl, mix coconut cream, maple syrup, vanilla extract, and lemon juice.
Add chia seeds and let the mixture rest for 5 minutes.
Place crushed cookies or granola at the bottom of a jar.
Add a layer of the cream mixture.
Add a layer of fresh berries.
Repeat layers until the jar is full.
Chill the dessert for 20–30 minutes.
Add extra berries on top and serve.
Use fresh berries for the best taste.
Frozen berries work if thawed and drained.
Add granola right before serving for better crunch.
