Ingredients

Instructions
 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Place vegetables in a bowl. Add olive oil, salt, pepper, garlic powder, and herbs. Toss well.
  • Spread vegetables in a single layer on the baking sheet.
  • Roast for 20–25 minutes, stirring halfway.
  • Simmer balsamic vinegar and honey in a small pan for 5–7 minutes until slightly thick.
  • Drizzle glaze over vegetables. Toss gently.
  • Roast for 5 more minutes.
  • Rest briefly, then serve.

Notes

Do not overcrowd the pan
Roast at high heat for best caramelization
Add glaze near the end to prevent burning
Use maple syrup for a vegan option
