Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Place vegetables in a bowl. Add olive oil, salt, pepper, garlic powder, and herbs. Toss well.
Spread vegetables in a single layer on the baking sheet.
Roast for 20–25 minutes, stirring halfway.
Simmer balsamic vinegar and honey in a small pan for 5–7 minutes until slightly thick.
Drizzle glaze over vegetables. Toss gently.
Roast for 5 more minutes.
Rest briefly, then serve.
