Ingredients
  

  • 250 g Biscoff cookies
  • 1 cup Biscoff spread
  • 2 cups strong brewed coffee cooled
  • 2 tbsp maple syrup or sugar
  • cups vegan whipping cream
  • 8 oz vegan cream cheese
  • cup powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • Cocoa powder for dusting

Instructions
 

  • Brew coffee and allow it to cool. Stir in maple syrup.
  • Beat vegan cream cheese until smooth.
  • Add powdered sugar, vanilla, and salt. Mix well.
  • Whip vegan cream in another bowl until soft peaks form.
  • Fold whipped cream into the cream cheese mixture.
  • Stir in ½ cup Biscoff spread.
  • Dip Biscoff cookies quickly in coffee.
  • Arrange cookies in a dish.
  • Spread cream mixture on top.
  • Repeat layers until finished.
  • Chill for at least 4 hours.
  • Dust cocoa powder before serving.
