Ingredients
  

  • lb boneless chicken breasts or thighs
  • 8 oz mushrooms sliced
  • 1 small onion chopped
  • 3 garlic cloves minced
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt and black pepper to taste
  • Fresh parsley or thyme

Instructions
 

  • Season chicken with salt, pepper, and paprika.
  • Heat butter and oil in skillet over medium heat.
  • Brown chicken on both sides. Remove and set aside.
  • Add mushrooms and cook until golden.
  • Add onion and garlic. Cook until soft.
  • Pour in broth and scrape the pan.
  • Stir in cream and herbs.
  • Return chicken and simmer until cooked through.
  • Garnish and serve warm.

Notes

Use plant-based cream for dairy-free version.
Add spinach for extra greens.
Naturally gluten-free.
