- 1.5 lbs cod fillets
- 1/4 cup avocado oil (or olive oil)
- 1 tsp lime zest
- 2 tbsp lime juice (freshly squeezed)
- 1 large clove garlic, minced
- 1 1/2 tsp chili powder
- 1 tsp paprika
- 1 1/2 tsp dried oregano
- 1/4 tsp black pepper
- 1/2 tsp sea salt
Preheat the oven to 400°F (200°C).
In a small bowl, combine all the ingredients for the marinade: avocado oil, lime zest, lime juice, minced garlic, chili powder, paprika, dried oregano, black pepper, and sea salt.
Pat the cod fillets dry with paper towels and place them in a shallow dish or ziplock bag.
Pour the marinade over the cod fillets and gently massage or turn the fish to coat evenly. Let it marinate in the fridge for at least 30 minutes, or up to 10 hours for deeper flavor.
Once marinated, transfer the cod fillets to a baking dish, ensuring they are evenly spread out.
Bake in the preheated oven for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork.
Optional: Garnish with chopped parsley or green onions for a fresh touch.
Serve with your favorite side dishes such as rice, roasted veggies, or a fresh salad.
-
For extra heat, add a pinch of cayenne pepper or drizzle with hot sauce after baking.
-
If using frozen cod, make sure it’s fully thawed and pat dry before marinating.
-
Cod can be easily substituted with other mild fish such as tilapia or haddock.
-
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
