Juice of 2 limes
Zest of 1 lime

red onion

Instructions
Cut chicken into bite-size pieces.
Season chicken with spices, salt, and pepper.
Heat oil in a skillet over medium-high heat.
Cook chicken until golden and cooked through. Remove.
Add onion and corn to skillet. Cook until soft.
Add garlic and cook briefly.
Return chicken to pan. Add lime juice and zest.
Stir well and serve warm.
Notes
Do not overcrowd the pan.
Adjust spice to taste.
Fresh lime juice gives the best flavor.
