Ingredients
  

  • pounds chicken breast or thighs
  • 2 cups corn kernels
  • 2 tablespoons olive oil
  • 3 garlic cloves minced
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • Salt and black pepper to taste
  • Juice of 2 limes
  • Zest of 1 lime
  • ½ red onion sliced
  • Fresh cilantro optional

Instructions
 

  • Cut chicken into bite-size pieces.
  • Season chicken with spices, salt, and pepper.
  • Heat oil in a skillet over medium-high heat.
  • Cook chicken until golden and cooked through. Remove.
  • Add onion and corn to skillet. Cook until soft.
  • Add garlic and cook briefly.
  • Return chicken to pan. Add lime juice and zest.
  • Stir well and serve warm.

Notes
