Equipment

Ingredients
  

  • For the cream layer:
  • 1 cup coconut cream thick part only
  • 1/2 cup vegan cream cheese
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • For the coffee layer:
  • 1 cup strong brewed coffee cooled
  • 1 tbsp maple syrup
  • For layering:
  • Vegan ladyfingers or sponge cake
  • For topping:
  • Cocoa powder

Instructions
 

  • Brew coffee and let it cool. Add maple syrup and mix well.
  • In a bowl, mix coconut cream, vegan cream cheese, sugar, and vanilla until smooth.
  • Dip ladyfingers quickly in coffee for 1–2 seconds.
  • Place a layer of dipped biscuits in a dish.
  • Spread a layer of cream on top.
  • Repeat layers until finished.
  • Dust cocoa powder on top.
  • Chill in the fridge for at least 4 hours before serving.

Notes

Do not soak biscuits too long
Use thick coconut cream for best texture
Chill well before serving for clean layers
