Ingredients
  

  • 3-4 cups fresh broccoli florets
  • 1 cup panko breadcrumbs (or gluten-free breadcrumbs)
  • 1 cup grated cheddar or mozzarella cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4  tsp black pepper (freshly ground)
  • 1/2  tsp salt
  • 2 tbsp  chopped fresh herbs (optional, like parsley or thyme)
  • 2 tbsp  olive oil (for frying)

Instructions
 

  • Prepare the Broccoli: Steam or boil the broccoli until tender, about 5-6 minutes. Drain well and let it cool. Once cooled, chop the broccoli into small pieces.
  • Mix the Ingredients: In a large mixing bowl, combine the chopped broccoli, eggs, breadcrumbs, cheese, garlic powder, onion powder, salt, and pepper. Mix well until the ingredients are thoroughly combined.
  • Form the Cakes: Shape the mixture into round or oval patties, about 2-3 inches in diameter.
  • Fry the Cakes: Heat olive oil in a skillet over medium heat. Fry the cakes in batches, 3-4 minutes per side, until golden brown and crispy. Remove from the skillet and drain on a paper towel-lined plate.
  • Serve and Enjoy: Serve the cakes with your favorite dipping sauce, like tzatziki or ranch dressing.

Notes

    • Chill the mixture: If the mixture is too soft or sticky, chill it in the fridge for 20-30 minutes before shaping the cakes. This will help the cakes hold together better while frying.
