Ingredients
  

  • 2 cans 15 oz each Cannellini beans
  • 1/2 medium red onion finely diced
  • 1/4 cup extra virgin olive oil
  • 2 large lemons juiced (approx. 4-5 tablespoons)
  • 2 cloves garlic minced
  • 1/2 cup fresh parsley chopped
  • 1/2 tsp salt add more to taste
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes

Instructions
 

  • Drain and rinse the beans thoroughly in a colander.
  • In a small jar, combine olive oil, lemon juice, minced garlic, salt, pepper, and red pepper flakes. Shake well.
  • Place the rinsed beans, diced red onion, and chopped parsley into a large bowl.
  • Pour the dressing over the bean mixture.
  • Toss gently until all ingredients are evenly coated.
  • Let the salad sit for at least 15 minutes before serving to allow flavors to meld.

Notes

If you find red onions too sharp, soak them in water first.
Add Feta cheese for a Mediterranean twist.
Use high-quality olive oil for the best flavor.
