Ingredients
  

  • 1 cup cottage cheese full-fat, reduced-fat, or fat-free
  • 2 large eggs
  • 1 teaspoon garlic powder optional
  • 1 teaspoon Italian seasoning optional
  • 1 teaspoon baking powder
  • Salt to taste
  • 1 tablespoon olive oil optional for a richer flavor
  • 1-2 teaspoons of dried herbs like oregano or thyme optional for topping

Instructions
 

  • Preheat your oven to 350°F (176°C).
  • Place the cottage cheese and eggs in a food processor or blender and blend until smooth.
  • Add garlic powder, Italian seasoning, baking powder, and salt to the mixture and blend again until fully combined.
  • Line a baking sheet with parchment paper and lightly coat it with cooking spray to prevent sticking.
  • Pour the mixture onto the prepared baking sheet, spreading it evenly to your desired thickness (thin for wraps, thicker for flatbreads).
  • Optionally sprinkle herbs like oregano or thyme on top of the dough for extra flavor.
  • Bake for 30-35 minutes, or until golden brown around the edges. For thicker flatbreads, bake for an additional 10-15 minutes.
  • Remove from the oven and allow to cool completely before slicing. Enjoy as wraps, a pizza base, or a side to your favorite dishes.

Notes

    • Customizable: Feel free to add different seasonings like cumin, chili powder, or even curry powder to change the flavor.
 
  • Consistency: If the dough is too runny, you can add a bit of almond flour or coconut flour to thicken it.
