- 1 lb ground beef or turkey
 - 1 small onion diced
 - 2 garlic cloves minced
 - 2 cups beef broth
 - 1 cup milk
 - 2 cups elbow macaroni or short pasta
 - 1 tbsp tomato paste
 - 1 tsp paprika
 - 1 tsp garlic powder
 - 1 tsp onion powder
 - 1½ cups shredded cheddar cheese
 - 1 tbsp olive oil or butter
 - Salt and pepper to taste
 - Optional Add-ins
 - 1/2 cup frozen peas or spinach
 - 1/2 cup diced bell pepper
 - Pinch of red pepper flakes for heat
 
 
Heat olive oil in a skillet over medium heat.
Add ground beef and cook until browned.
Stir in onion and garlic; cook 2 minutes.
Add tomato paste and seasonings. Stir to coat the meat.
Pour in beef broth and milk. Add pasta and stir.
Bring to a boil, then lower heat and simmer 10–12 minutes until pasta is tender.
Turn off heat and stir in shredded cheese until melted.
Taste and season with salt and pepper before serving.
 
Use freshly shredded cheese for the best melting texture.
Add a splash of milk if you want extra sauce.
For a healthier version, use turkey and add more veggies.
Do not let the cheese melt over high heat — it may turn grainy.
