Ingredients
  

  • 6  bone -in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • ½ cup water
  • 2 cloves garlic, minced
  • ¼ cup honey
  • 2 tablespoons Dijon mustard
  • 3 tablespoons stone-ground mustard (or whole grain mustard)
  • 1  pound  baby potatoes, halved
  • 3 carrots , peeled and sliced into 1-2 inch pieces

Instructions
 

  • Sear the Chicken: Set your Instant Pot to SAUTE and heat the olive oil. Season the chicken thighs with salt and pepper, then add them to the pot. Brown each side of the chicken for about 2-3 minutes, until golden. Remove the chicken and set it aside.
  • Deglaze the Pot: Add ½ cup of water to the pot, using a wooden spoon to scrape up any browned bits stuck to the bottom of the pot. This adds flavor to the sauce.
  • Make the Sauce: Add the minced garlic, honey, Dijon mustard, and stone-ground mustard to the Instant Pot. Stir to combine, creating a honey mustard sauce.
  • Add Vegetables: Add the halved baby potatoes and carrot pieces to the pot. Season with more salt and pepper, then stir to coat the vegetables with the sauce.
  • Pressure Cook: Return the browned chicken thighs to the pot, placing them on top of the vegetables. Close the lid, set the valve to SEALING, and select MANUAL or PRESSURE COOK on high for 8 minutes.
  • Quick Release: When the cooking time is up, perform a quick release by turning the valve to VENTING. Carefully open the lid.
  • Serve: Garnish with chopped parsley if desired, and serve immediately with the vegetables and sauce.

Notes

  • Cooking Time: The cooking time for chicken thighs may vary depending on their size. If using small boneless thighs, cook for 6 minutes; for larger thighs, cook for 10 minutes.
  • Chicken Breasts: You can substitute chicken breasts, but reduce the cooking time to 6 minutes to avoid dryness.
  • Adding More Vegetables: You can add other vegetables like Brussels sprouts or sweet potatoes. Adjust the cooking time accordingly based on the type of vegetables.
