Ingredients
  

  • 1 lb ground beef
  • 2 tablespoons butter
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup cauliflower florets
  • 3 cups beef broth
  • 1 cup heavy cream
  • cups shredded cheddar cheese
  • 4 oz cream cheese
  • Salt and pepper to taste
  • Optional toppings: bacon pickles, green onions

Instructions
 

  • Brown ground beef in a pot over medium heat. Remove and set aside.
  • Melt butter in the same pot.
  • Add onion and cook until soft.
  • Add garlic and cook briefly.
  • Add cauliflower and beef broth. Simmer until cauliflower is tender.
  • Stir in heavy cream and cream cheese.
  • Return cooked beef to the pot.
  • Add shredded cheddar cheese and stir until melted.
  • Season with salt and pepper.
  • Simmer for 5 minutes and serve.

Notes

Use fresh shredded cheese for the best texture.
Keep heat low when adding dairy.
