- ½ cup coconut flour
- 2 large eggs
- 1 tablespoon psyllium husk powder
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup water or unsweetened almond milk
- 1 tablespoon olive oil or coconut oil
Add coconut flour, psyllium husk powder, baking powder, and salt to a bowl. Mix well.
Add eggs, oil, and water. Stir until a thick dough forms.
Let the dough rest for 2 minutes.
Divide dough into equal balls. Flatten each between parchment paper.
Heat a nonstick pan on medium heat.
Cook each flatbread for 2–3 minutes per side until lightly golden.
Measure coconut flour carefully.
Keep flatbreads thin for flexibility.
Cook on medium heat only.
