Ingredients
  

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup sun-dried tomatoes
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions
 

  • Season salmon with salt and pepper.
  • Sear salmon in olive oil and remove.
  • Melt butter and cook garlic briefly.
  • Add cream and broth. Simmer.
  • Stir in tomatoes, spinach, and cheese.
  • Return salmon and simmer gently.
  • Serve hot with sauce.
