Ingredients
  

  • For the crust
  • 1 cup unsalted butter melted
  • 2 cups all-purpose flour
  • ½ cup powdered sugar
  • ¼ tsp salt
  • For the filling
  • 3 large eggs
  • 1 cup granulated sugar
  • ¼ cup all-purpose flour
  • ¼ cup fresh lemon juice
  • 1 tbsp lemon zest
  • ½ tsp vanilla extract
  • cups fresh blueberries
  • Optional
  • Powdered sugar for topping

Instructions
 

  • Preheat oven to 350°F (175°C). Line a 9×13 pan with parchment paper.
  • Mix melted butter, flour, powdered sugar, and salt. Press mixture into pan.
  • Bake crust for 15–18 minutes until lightly golden.
  • In another bowl, whisk eggs, sugar, flour, lemon juice, lemon zest, and vanilla.
  • Fold in blueberries gently.
  • Pour filling over baked crust.
  • Bake again for 22–25 minutes until center is set.
  • Cool completely, then chill in fridge for 1–2 hours.
  • Dust with powdered sugar and slice into bars.

Notes

Fresh lemon juice gives the best flavor.
Do not overbake the filling.
Chill before cutting for clean slices.
Frozen blueberries can be used without thawing.
