Ingredients
  

  • Chicken breast or thighs – Tender protein that shreds easily

  • Chicken broth – Main liquid and depth
  • Orzo pasta – Small cozy texture

Instructions
 

  • Add chicken, onion, carrots, celery, garlic, Italian seasoning, salt, and pepper to the crockpot.
  • Pour in chicken broth. Stir gently.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  • Remove chicken. Shred with two forks and return to the crockpot.
  • Add orzo pasta. Stir well. Cook on HIGH for 20–30 minutes until tender.
  • Stir in lemon juice, lemon zest, and spinach. Cook 5 minutes more.
  • Taste and adjust seasoning. Rest briefly, then serve.

Notes

Add orzo near the end to avoid mushy pasta
Add more broth if soup thickens
Lemon goes in last for best flavor
