Ingredients
  

  • 1 large cucumber chopped
  • cups cherry tomatoes halved
  • 1/4 red onion thinly sliced
  • 1 bell pepper diced
  • 1/2 cup Kalamata olives sliced
  • 1/2 cup feta cheese crumbled
  • 2 tbsp fresh parsley or dill chopped
  • 3 tbsp olive oil
  • tbsp lemon juice or red wine vinegar
  • Salt and black pepper to taste

Instructions
 

  • Wash and chop all vegetables into bite-size pieces.
  • Add vegetables and olives to a large bowl.
  • Sprinkle feta cheese on top.
  • In a small bowl, mix olive oil, lemon juice, salt, and pepper.
  • Pour dressing over salad and toss gently.
  • Add herbs, taste, and serve.

Notes

Use fresh vegetables for best flavor
Add dressing slowly to avoid overdressing
Add avocado just before serving
Serve chilled or at room temperature
