Ingredients
  

  • pounds chicken breast or thighs
  • 2 cans full-fat coconut milk
  • 3 tablespoons red curry paste
  • 4 cups chicken broth
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 1 bell pepper sliced
  • 2 carrots sliced
  • 1 onion chopped
  • 1 tablespoon soy sauce or fish sauce
  • 1 teaspoon brown sugar
  • Juice of 1 lime
  • Fresh cilantro optional

Instructions
 

  • Add all ingredients except lime and cilantro to crockpot.
  • Stir gently to combine.
  • Cook on low 6–7 hours or high 3–4 hours.
  • Stir in lime juice before serving.
  • Garnish with cilantro and serve.

Notes

Use full-fat coconut milk for best results.
Adjust curry paste to control heat.
