Ingredients

  • 1 head cabbage shredded or finely chopped
  • 2 tablespoons olive oil or ghee for a richer flavor
  • 1 teaspoon cumin seeds
  • 1- inch fresh ginger grated
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • ¼ cup water
  • ¾ cup peas fresh or frozen
  • Salt to taste

Instructions

  • Prepare the Cabbage: Wash and finely shred or chop the cabbage. A food processor works great for quick and even chopping.
  • Sauté the Spices: Heat the olive oil in a pan over medium heat. Add cumin seeds and grated ginger. Sauté for about 1 minute until fragrant.
  • Add the Cabbage: Add the shredded cabbage to the pan and stir to combine with the spices. Add paprika, ground coriander, and salt to taste.
  • Cook the Cabbage: Pour in ¼ cup of water and cover the pan. Cook for 8-10 minutes, stirring occasionally, until the cabbage is tender.
  • Add the Peas: Stir in the peas (fresh or frozen) and cook for another 1-2 minutes until heated through.
  • Serve: Remove from heat and serve hot.

Notes

    • Variations: For a heartier dish, you can add diced potatoes or other vegetables like carrots or bell peppers.

    • Ghee: Use ghee instead of olive oil for a more traditional Indian flavor.

  • Spicy Option: If you like more heat, add chopped green chilies or red chili powder to the dish.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat on the stovetop or in the microwave.
