Ingredients
  

  • 3- pound  sirloin tip roast (or chuck roast)
  • 2 teaspoons  kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1-2 tablespoons olive oil
  • 5 medium carrots, peeled and cut into 1-inch pieces
  • 1 stalk celery,  cut into 1-inch pieces
  • 1 medium onion, rough chopped
  • 3 cloves garlic, chopped
  • 1 pound baby gold potatoes
  • 3 cups  beef stock
  • 3-4 sprigs fresh thyme
  • 1 sprig   fresh rosemary

Instructions
 

  • Sear the Beef: Set your Instant Pot to sauté mode and preheat. Season the roast with salt and pepper. Add 1 tablespoon of olive oil and sear the beef for 1-2 minutes on each side until well-browned. Remove the beef and set it aside.
  • Sauté Vegetables: Add another tablespoon of olive oil if needed. Sauté onions, carrots, and celery for 3-4 minutes, until softened. Add garlic and cook for 1 more minute.
  • Deglaze the Pot: Add ½ cup of beef stock to the pot and scrape up any browned bits from the bottom.
  • Add Remaining Ingredients: Return the seared roast to the pot. Add the remaining beef stock, potatoes, thyme, and rosemary. Stir gently to combine.
  • Pressure Cook: Close the Instant Pot lid and set the valve to sealing. Cook on high pressure for 65 minutes for a 3-pound roast.
  • Natural Pressure Release: After the cooking cycle is complete, allow the pressure to release naturally for 10-15 minutes before venting any remaining pressure.
  • Prepare the Gravy: Remove the roast and vegetables. Strain the cooking liquid, return it to the pot, and set the Instant Pot to sauté. Mix cornstarch and water to make a slurry and add it to the pot. Simmer until the gravy thickens (about 2-3 minutes).
  • Serve: Break the roast into chunks, top with gravy, and serve with the vegetables.

Notes

    • You can use other cuts of beef like brisket or round roast. Adjust cooking time accordingly.
    • For a spicier flavor, add a pinch of cayenne or paprika to the roast.
 
  • If you prefer firmer potatoes, add them halfway through the cooking time.
  • This recipe is easily doubled; just adjust the cooking time accordingly for larger roasts.
