Ingredients
  

  • 2 ripe bananas
  • 1 ½ cups all-purpose flour
  • ½ cup brown sugar
  • ¼ cup white sugar
  • ½ cup vegan butter melted
  • ¼ cup plant milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions
 

  • Preheat oven to 180°C (350°F).
  • Mash bananas in a bowl until smooth.
  • Add melted butter and sugars. Mix well.
  • Add plant milk and vanilla. Stir.
  • Add flour, baking powder, baking soda, and salt. Mix gently.
  • Pour batter into lined baking pan.
  • Bake for 25–30 minutes until golden.
  • Let cool before cutting into squares.

Notes

Use very ripe bananas for best flavor
Do not overmix the batter
Do not overbake to keep blondies soft
Let cool fully before slicing
