Ingredients
  

  • Blondie Batter:
  • 1 ½ cups all-purpose flour
  • ½ cup brown sugar
  • ¼ cup white sugar
  • ½ cup vegan butter melted
  • ¼ cup plant milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp salt
  • Cinnamon Swirl:
  • 2 tbsp brown sugar
  • 1 tbsp cinnamon
  • 1 tbsp melted vegan butter
  • Optional Glaze:
  • ½ cup powdered sugar
  • 1 –2 tbsp plant milk
  • ½ tsp vanilla

Instructions
 

  • Preheat oven to 180°C (350°F). Line a pan with parchment paper.
  • In a bowl, mix melted butter, sugars, milk, and vanilla.
  • Add flour, baking powder, and salt. Mix gently.
  • In another bowl, mix cinnamon swirl ingredients.
  • Spread half the batter in the pan. Add cinnamon mix.
  • Add the rest of the batter on top.
  • Use a knife to swirl lightly.
  • Bake for 20–25 minutes.
  • Let cool before cutting.
  • Add glaze on top if desired.

Notes

Do not overmix the batter
Do not overbake (center should be soft)
Let it cool fully before slicing
Use good quality cinnamon for best flavor
