- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup sugar
- ⅓ cup vegetable oil
- 2 tbsp plant-based milk
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- ¼ cup powdered sugar
Mix dry ingredients in one bowl.
Mix wet ingredients in another bowl.
Combine both to form dough.
Chill dough for 30–45 minutes.
Preheat oven to 350°F (175°C).
Roll dough into balls and coat with powdered sugar.
Bake for 10–12 minutes.
Let cool and serve.
