Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup sugar
  • cup vegetable oil
  • 2 tbsp plant-based milk
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • ¼ cup powdered sugar

Instructions
 

  • Mix dry ingredients in one bowl.
  • Mix wet ingredients in another bowl.
  • Combine both to form dough.
  • Chill dough for 30–45 minutes.
  • Preheat oven to 350°F (175°C).
  • Roll dough into balls and coat with powdered sugar.
  • Bake for 10–12 minutes.
  • Let cool and serve.

Notes

Use fresh lemon for best flavor
Chill dough for better texture
Do not overbake
