Ingredients
  

  • For the crust:
  • 1 ½ cups graham cracker crumbs
  • 1/3 cup sugar
  • 6 tbsp melted butter
  • For the filling:
  • 4 egg yolks
  • 1 can sweetened condensed milk
  • 1/2 cup fresh key lime juice
  • 1 tbsp lime zest
  • Optional topping:
  • Whipped cream
  • Extra lime zest

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Mix graham crumbs, sugar, and melted butter.
  • Press mixture firmly into a baking pan.
  • Bake crust for 8–10 minutes and let it cool slightly.
  • In a bowl, whisk egg yolks until smooth.
  • Add condensed milk, lime juice, and zest. Mix well.
  • Pour filling over crust and spread evenly.
  • Bake for 12–15 minutes until set.
  • Cool at room temperature, then chill for at least 2 hours.
  • Slice into bars and serve.

Notes

Use fresh lime juice for best flavor
Do not overbake the filling
